Since 1800, pasta has played a leading role in the Cappellino family. The step from an ancient water mill owned by grandparents Vacanti to establishment of the pasta factory was short. After 1935, the factory was run by my grandfather Giuseppe Cappellino. Production took place through a mechanical and craft process, capable of producing 500 kg of puree a day.
Today, as then, the tradition continues. The limited production takes place with a craft plant. Selection and certification of the Sicilian semolina, slow processing and drying at low temperature combine tradition and modernity, enabling closure of the production chain.
